Baking Day- FloppeRoo

Should I blame it on lack of sleep, on a fussy baby with an ear infection? Should I blame it on bad recipes?

OK, my baking day was a FLOP. I spent almost all day in the kitchen and all I got was a pile of baked goods for our dogs... I spent a lot of time on making homemade white bread. If there is one thing I am good at, it is following instructions and recipes. So I followed the recipe I found for white bread, you know all of the kneading and rising and all that fun stuff. While I was kneading the bread, I thought something didn't "feel"right. It seemed so stiff and hard to knead. But I kept kneading and re-looking at the instructions trying to backtrack in my mind, did I forget something??? I knew I had the recipe right, following it to the T. So I kept going. I rose really well, I split it up , put them in pan, let them rise again, still good, and then put them in the oven. It was supposed to bake for 1 hour. So, I thought I would go lay down for a little bit until the timer went off...

I know, there are so many things that could go wrong...

So, I went and layed down, Koen was napping, and Caden had also woke up very very early, so I had him lay on my hubby's pillow. Well, he thrashed around a while and finally fell asleep. OK, I still had 25 minute. That would take the edge off. So I think I finally dozed off and the timer sounded. I hoped up and something didn't smell right. I got the bread out, and it was a little too done on the outside. But that wasn't the problem. The PROBLEM was that it was hard as a ROCK.... Not exactly the quality you want in a piece of bread. So I had to throw those 2 LOAVES out...

So, I thought, I would make waffles and then freeze them. I got in my cupboard that I keep my mix in. And I noticed a box of pancake /waffle mix that I didn't know I had. I thought it was odd, but it was already open so I thought I should use it up. So, I made waffles. And I took the first waffle off the maker, and it crumbled... I looked at the expiration date and we are about 2 weeks from the expiration... Why was it crumbling??? So I tried another, and another... All crumbling.

GREEEEZZZ!!!

So, I gave up and made supper. Which turned out great (thank you , Jesus). I am going to ATTEMPT another baking day NEXT week. I will make sure I have plenty of sleep, and new waffle mix. I also need a good recipe for homemade bread! I will NOT be trying the other recipe again! SO, if any of you know of any good recipes, e-mail me or comment below.... PLEASE!!!!

Caden's ear has been feeling better, but Koen is still waking up early and crying until Tylenol kicks in. This morning he woke up at 4:30 AM... So, I'm a little tired again today! Thanks for your prayers!

Oh Dear! Next one will be better I'm sure! Sorry I don't have a bread recipe. That's something I don't make, maybe someday!

Well Sarah, isn't it great that not all days are like that. I'm glad the boys are a little better, I'll keep praying for them. I'm sure your next baking day will go great! This is the bread I make

Oatmeal bread
1 cup quick oats
(you can use regular oatmeal too)
1/2 cup whole wheat flour
(I use 2 cups, to make it a little healthier)
1/2 cup honey (or brown sugar)
1 T. salt
2 T. butter (I use olive oil instead)
2 1/2 cups warm water
1 T. yeast or 1 package
5 cups of white flour (if you use more w.w. flour use less white!)

Combine oats, ww flour, honey, salt, oil, yeast. Dump the water over and mix. After mixed add white flour, When it's stiff enough to handle knead 5-10 minutes. Place in a greased bowl,cover and let rise. Punch down and shape into loaves and put into pans and let rise again. For 40 minutes or so bake @ 350 for 30-40 minutes, makes 2 loaves.
I use my kitchen-aid mixer to do all this which makes it very easy. (if you have one I'd recommend you use it) I also bake mine in a 360 degree oven for 35 minutes. I know ovens are different. If you have any questions let me know.
